The Makers & Their Cheeses - Chiara

Hey ya’ll! My name is Chiara, also known as Chi B, ChiChi, Chiaseeds. The List
goes on! I am the BFF of the amazing mind behind Platter Up Co and I could not be
prouder. Yes, I am that best friend who is jumping up in the crowd screaming
THAT’S MA GIRL! And no, I will not stop.

This amazing business started, and I am proud to say I’ve been there from the start,
stuffing my face tasting different cheeses only to find my FAVOURITE out of them all to be… Truffle Pecorino. This cheese is the definition of
supercalifragilisticexpialidocious – a word that is used when you have nothing to say.
Tasting the Truffle Pecorino gives me this EXACT jaw dropping experience.

Truffle Pecorino is an Italian cheese made from raw sheep’s milk encrusted with
small specks of white and black truffles between the areas of the Volterra and San
Minato. It is aged for thirty days.

Truffle is a strong taste. I could not compare it to anything and unlike other cheeses
it does not need added ingredients on the cracker such as quince paste. This cheese
is beautiful eaten by itself paired with some cold meats and a gooooooood red wine.

BRB, going to find some Tuffle Pecorino from Katelyn’s fridge.
