The Makers & Their Cheeses - Katelyn

Hey gang! My name is Katelyn, I'm the owner of this bloody dream of a business. I started Platter Up Co when I was 21, however my love for cheese began much sooner than that. I'm pretty sure I came out of the womb requesting cheese.

I have the worlds best team backing me and I want everyone to hear more from the people who help keep this biz thriving. 

So welcome to the 'Meet The Makers' journal. 

What better way to start this blog series off than with introducing ourselves AND our favourite cheeses?

 I'll go first..

My favourite cheese is a 12 month aged Manchego. Not to be compared to a 3 month or 6 month aged. It NEEDS to be 12 months. You don't want to fight me on this one, I cry when I get defensive. 

Manchego is a Spanish (home of the sexiest language AND sexiest cheese) sheeps milk cheese. And when aged for 12 months (Viejo), has a similar texture to that of parmesan, but a tad more creamy and nutty. 

This baby is perfectly paired with gourmet fruity crackers and when topped with honeycomb or a couple of cranberries, is enough to make you never look at any other cheese with the same adoration.

If you haven't tried 12 Month Aged Manchego, please do yourself a favour and head to your nearest Harris Farm Market or cheese store and pick some up. Sometimes I forget to buy milk, but my fridge has a healthy supply of Manchego at ALL TIMES.
